They set to work in developing a new blend of coffee which created a lighter, brighter and more complex flavour than anything we had done previously. After several months of research and development the guys settled on a blend taking in three different continents, Central America, Asia and Africa.
Steve set to work on the roast profile on our Diedrich IR-12 Roaster and finally after many tweaks, the roast curve was agreed and Aviator was born. The name comes from the fact that the coffee is vibrant, sweet and tropical with the iconic Aviator glasses on the bright label. We were all delighted with the amazing flavour and tasting notes of blueberry, grapefruit and macadamia so much so that we thought we would put the blend forward at this year’s Great Taste Awards.
The Great Taste Awards is the largest and most trusted accreditation scheme for fine food and drink. This year, 12,000 products were blind tasted by panels of specialists: top chefs, cookery writers, food critics, restauranteurs and fine food retailers. This involved over 500 judges tasting products over various categories over 60 days between March and July.
The judges can choose to award 1, 2 or 3 stars to a product to illustrate the level of quality it delivers when taste. We were delighted to learn that the Roastology Aviator Coffee had won the coveted 3 Star award, one of only 192 products across all categories.
The judges commented ‘There’s an intense juicy acidity to this espresso that gives up an amazing aroma of dried fruit. The bitterness is very well balanced – earthy bitterness and notes of chocolate and tobacco. A very well rounded espresso with delicious, mouth puckering, funky, fermented notes lurking in the back’.
